Tortellini with Peas and Bacon

As you can presume I love cooking and preparing all kinds of recipes, but sometimes I just lack time. So today I prepared a quick, but exquisite lunch that made us wanting more. It is one of the classic sauces for pasta, but it is absolutely delicious! The best thing is that I got to prepare whole wheat bread and pear and apple jam made with agave syrup yesterday after my son went to bed. So today we started the day awesomely by eating some fresh homemade bread and jam. That is my favorite breakfast, a nice slice of bread with cream cheese and jam… yummy! The combination of cream cheese, sweet flavor of the jam and crunchy seeds is the one I like the most… did a cheesecake crossed your mind now?

I have learned from my mom how to make an amazing bread without kneading in a super fast way. Also, the pear and apple jam is very quick to make, but the thing I love about that jam is that I prepare it with agave syrup and no sugar, which gives it a super sweet flavor, but it is much healthier version.

I wanted this blog to be only a pasta blog because we really love pasta and I prepare it like 6 times a week, but every time a different recipe. Well, no worries about getting extra weight… You just need to be careful about the portions and eat carbohydrates preferably for lunch and that’s it… My husband is a fitness nut and he is really serious about staying in shape, but he doesn’t give up on his daily pasta portion… But be careful with this recipe, because one portion has 600 calories, so if you are on diet maybe you should look out for other recipes 🙂 I try to avoid cooking cream as much as I possibly can because it is high in fat and calories, but some recipes are just much more tasty with cooking cream, there is nothing to do about it, you just have to add it in.

Tortellini with Bacon and Peas

Let’s go back to today’s recipe… Tortellini with peas and bacon… As I said it is quick to prepare, but only if you are not planning to make your own tortellini, you will need just 25 minutes and voilà! Ready to eat! I used frozen peas, but if you use fresh ones, you will need some extra time to prepare this dish. You can use sweet or smoked bacon, as you like… I prefer smoked bacon for almost all recipes because we really like that smokey flavor.
Another thing I wanted to mention is that tortellini will taste better if you cook them in vegetable broth or as I sometimes do, in water with lavender flowers. It may sounds strange to some, but I love the taste. It is a bit particular but try it. One of my mother’s favorite recipes is lavender risotto and with her I learned adding seeds, nuts and herbs in almost every recipe. Well I must admit that I like to experiment very much with lavender when preparing various dishes like risottos, meat marinades, cookies and of course, pasta.

Tortellini with Peas and Bacon

  • Yields: 4 Servings

Ingredients

350 g Tortellini

1 Onion

100 g Smoked Bacon

100 ml Cooking Cream

100 g Peas

3 tbsp Extra-Virgin Olive Oil

2 tbsp Parmesan cheese

Salt and Pepper, to taste

Directions

1Warm the oil in a skillet and add finely chopped onion. Cook until golden.

2Add diced smoked bacon, stir for a minute with the onion and then add the peas. Cook for 20 minutes on low heat.

3Add water if necessary and cook until the peas are fork tender.

4Meanwhile bring a large pot of salted water to the boil and cook the tortellini as indicated on the package.

5Add cooking cream, parmesan cheese and toss to coat.

6Adjust with salt and pepper.

If you like more creamy sauces add more cooking cream.
