Langoustines are very easy and quick to prepare. If you read my posts before, you know I’m not a big fan of seafood, but hey… who can say no to a delicious langoustine dish?! I love preparing them seasoned and grilled with some parsley, garlic and olive oil sauce, but they are also perfect prepared with pasta. Pasta with langoustines, butter and sage is an easy and fast recipe to prepare, that is another reason why I love it 🙂 But the best of all it is extremely tasty. Butter and sage sauce is one of my favorite ones, it is light, simple, full of warm flavor even if you have just three leaves of sage… Butter and sage are just… a perfect combination!
One of the traditional Croatian dishes made in Dalmatia (the region where I grew up) is langoustine in garlic, tomato and white wine sauce or “Skampi na buzaru”, so if you plan on visiting Croatia it is a must-try dish… Langoustines are very popular there as numerous other seafood recipes… If you want to prepare them with pasta I recommend you this sage and butter recipe or the one I nominated before. If you don’t like sage, you can prepare a simple garlic and olive oil sauce or cherry tomato sauce.
Remember that if you buy frozen langoustines, if they have been defrosted, do not absolutely refreeze them. The best option is to buy fresh langoustines, but I know that the most of us are not able to do so. I buy them fresh only when I go back home in Croatia as my family lives on the island and the fresh fish is available almost every day… You can really prepare so many fancy dishes with langoustines, but to tell you the truth, when I was little I ate the only grilled langoustines dipped in the pink sauce (mayo, ketchup, lemon)… yummy!
