This is my sons favorite pasta recipe and I prepare it often because he is a choosy eater. Up until a few month ago he ate only pasta with olive oil and parmesan cheese. So I won with this one! š It is very simple to prepare and so tasty. You can use any type of tomatoes for making this meal, I usually use those flavorful plum tomatoes which I also use for making basic tomato sauce. You should never use canned tomatoes for preparing sauces because it will never be as tasty as when prepared with fresh tomatoes and I think that is obvious. If you don’t have much time, prepare the basic tomato sauce with fresh tomatoes in advance and store it, so you can use it when needed. For this recipe you will need around 20 minutes to prepare the sauce, it isn’t that long, right?
Another important ingredient are basil leaves, you can tear them by hand and toss them in. In pasta salad recipes, you put just fresh ingredients without cooking, but remember when cooking a sauce for the pasta, basil leaves should be added at the end, after removing theĀ sauce from the fire, try it and you will note the difference, if you used to cook basil leaves, with the sauce before. For garnishing this dish use fresh basil leaves and shave parmesan cheese by using the vegetable peeler, I love it. Vegetable peeler is one of my best friends in the kitchen, I use it for making vegetable leaves for sauces, garnishing dishes and making all kind of vegetable chips. In the future I will post some photos of those chips I make, my kid goes crazy for it. I need to camouflage the vegetables, cover their flavor and do the magicians job sometimes to make him eat something healthy. If you have a child that is a choosy eater as mine, you know the feeling of thinking twice before preparing a meal. I’m not one of those moms like mine was, if I didn’t want to eat something she prepared, because I didn’t like it, she was like: “Ok, you won’t eat anything else until you finish this” or even worse: “You will sit there until you finish it!” Oh no..!
So prepare pasta, I think all kids love it. We are absolutely a pasta lovers family, we eat pasta every single day and we love it. For the little one, I usually prepare the alphabet pasta or mix different types, or when I make fresh pasta at home, we have fun together by making all those funny forms that I cook for him later (He is only 3 years old, so imagineĀ all the fun).

This is my go to recipe when I need a quick meal. Perfect and nutritious. Always do have tomatoes and tuna at home, so whenever I need a quick menu I do this kind of pasta.
