Oh my… this was the first time I made this recipe… Wow, it made my day, really! First of all I was super busy today and I rushed home to prepare something to eat and I had just one hour to do all the preparing, eating, my 10-minute coffee meditation 🙂 and, of course, I kind of never get to find the time for cleaning up the mess… Never mind… So I remembered I had a pack of ravioli stuffed with ricotta and tomatoes in the fridge and that was just great. I love ravioli, all kinds of ravioli and I will open a special category fo ravioli on this blog because they definitely deserve it… Unfortunately, I had no time lately for preparing ravioli at home and to be honest, I haven’t eaten them for a very long time (big mistake!), so today after eating this dish I’ve decided to make some homemade ravioli this weekend 🙂
If you have time, prepare ravioli at home, they are not difficult to prepare, you can make them as you prefer and of course, preserve them in the fridge for some time or even freeze them. These ravioli were exquisite as if they were homemade… And the best thing about this recipe is that it is so easy and fast to prepare! In the photo above there is also the Parmesan cheese, but in fact, I didn’t add any in the recipe, because after tasting the mix of olive oil, salmon and chives I didn’t think there was any need for adding Parmesan cheese, and yes, the recipe is much tastier than it seems on the photo. I’m actually not very good at taking photos, as you can notice there is a big difference between my photos and other bloggers photos, but, slowly but surely I will learn how to make those super inviting photos that represent the recipes in a much better way.
As I love onions, when I don’t use them for preparing the sauce, I put in some fresh chives in the dish. I don’t like dried chives and I almost never use it, because it doesn’t give me the flavor I want my dish with chives to have, as it is the case with fresh chives. So for this recipe I recommend you to use only fresh chives. I chose smoked salmon because I love its unique flavor and that is definitely one of the ingredients I could eat almost every day. One of the things that crossed my mind after I finished eating was that maybe it could have been even better if I added a few drops of lemon juice… Well, if you try this recipe and decide to add some lemon, let me know what you think. 🙂
