As I made that cute colored spaghetti with squid ink, I had to prepare some flavorful seafood sauce. I had a small pack of mussels in the freezer, really small one (250 g), but it was enough for two portions. There are numerous ways of preparing mussels sauce, I prefer the one with lemon juice, butter, and herbs or this one that I will write about in this post. This is the recipe my grandpa used to prepare often, with fresh mussels, so if you can buy some fresh mussels, the sauce will be more flavorful. The recipe is quite simple and it will take you only 30 minutes to prepare it, without counting the time for making fresh pasta if you decide to make it at home. You can find the recipe here.
Mussels in a creamy tomato sauce pair great with homemade spaghetti. If you haven’t eaten mussels in any other sauce than a white wine sauce, it is time to try this light recipe packed with flavor. You can prepare the sauce with mussels in shells although the sauce will be much tastier if you discard the shells from at least half of the mussels and cook the mussel flesh in the tomato sauce.
There is another way of preparing this recipe, by making it one-pan mussel dish. After adding the tomato sauce and the mussels, you add spaghetti directly into the sauce and cook it for 10 minutes, stirring often, especially if you have fresh spaghetti. You should add some water if the sauce is getting too thick. This is a great way to make savory spaghetti with mussels and that’s exactly the way my grandpa used to prepare it. It will never taste as his did, but it is delicious anyway. I don’t know if it ever happened to you too, but to me this thing happened so many times – it doesn’t matter how hard I try, I never, ever get to prepare a dish to taste as when my grandparents prepared it, even if using the same ingredients and amounts… I really don’t get it… After my grandma passed away, my mom tried to cook some dishes her mom used to cook for us, but they never tasted the same way.
