1Peel and dice avocado. Add all the ingredients to a food processor except the olive oil and pulse until finely chopped.
2Add the olive oil and pulse until a thick paste forms.
3Adjust with salt and pepper.
4Peel zucchini with a noodle peeler* and season with a few lemon drops.
5Combine zucchini noodles with pesto.
If you don't have a noodle peeler, just slice zucchini lengthwise with a vegetable peeler or knife and then slice them into thin strips. You can cook them for 3-5 minutes in a salted boiling water if you don't like them raw.
