1Heat the oven to 180°C.
2Wash the tomatoes and put them on a baking sheet, drizzle over the olive oil and season with salt, pepper and thyme.
3Roast for 20 - 25 minutes.
4Bring a large pot of salted water to the boil and cook the pasta as indicated on the package.
5Drain the pasta, put it in a large bowl and add 3 tbsp of extra virgin olive oil.
6Add roasted tomatoes, mozzarella pearls, arugula, Parmesan cheese and toss gently to coat.
7Adjust with salt and pepper.
