1Warm the olive oil in a skillet and add minced garlic, chopped parsley and a few mussels. Cook for 2 minutes.
2Add the tomato sauce and cook covered over medium heat until the sauce begins to boil. Add the rest of mussels and cook over low heat.
3Salt and Pepper to taste.
4Bring a large pot of salted water to the boil and drain the spaghetti 2 minutes before the time indicated on the package or in the recipe if homemade.
5Put spaghetti in the skillet with the sauce, toss well to coat and cook for two minutes over medium heat. Add some pasta water if the sauce is getting too thick (or mussels water if you pre-cooked* them)
6Sprinkle with some chopped parsley and serve immediately.
If you bought fresh closed mussels you will need to put them in salted boiling water for about 2 minutes or until they open. Scarpe the barnacles off with a knife and rinse them.
