One-Pot pasta recipes are not something I usually prepare… To be sincere I have never met anyone in Italy that prepares pasta like this, it is kind of a new technique and you I know that in Puglia and Liguria region they sometimes prepare pasta like this. This is a great recipe and a very creamy one, but to tell you the truth I prefer to prepare the pasta and the sauce separately… It is hard to give up on a good old “soffritto”, and for that reason, I didn’t put all the ingredients at once in this recipe, but it is still a one-pot pasta recipe… 🙂
One-pot pasta recipes are great for those who have little time for cooking and for the cleaning up part. When cooking all the ingredients at once, the flavors amalgamate better just like when you prepare risotto and the starch released from the pasta will make the dish deliciously creamy. So, starch is the key ingredient if you want to prepare a creamy pasta dish, but if you prefer to prepare the pasta separately, you can always add some cooking water of the pasta to the sauce if you want it to be creamier. There are not many ingredients that you can use to prepare one-pot pasta and will taste good, but pumpkin is definitely one of those few ingredients.
I love preparing different kinds of recipes with pumpkin, not only because it is super tasty and healthy, but also because till just a few years ago for me it was an ingredient I really knew little about. In the part of the country where I grew up, pumpkin isn’t a traditional ingredient. When I came in Italy I discovered this delicious fruit (till then I was convinced it was a vegetable!) and since then I prepare it often. In this recipe, I added rosemary, but if you don’t like it, you can add sage or thyme… If you want to prepare it faster you can use a pumpkin puree instead of cooking fresh sliced pumpkin.
