Pasta with Gorgonzola and Walnuts

Pasta with gorgonzola and walnuts is a delicious veggie pasta you will love for so many reasons. As number one reason, you will prepare it in just 10 minutes, what’s better than that? This dish is bursting with flavor… I promise you, if you are a fan of blue cheese, you will add this recipe to your list of favorites.

I don’t know about you, but I hate cleaning after myself once I’m done with all the cooking. I remember when we first moved in together, in a rented apartment, there was no dishwasher… Oh my… I said to my husband (boyfriend at the time) that we have to buy a dishwasher, like immediately, and he said that there is need for a dishwasher, that we are only in two… what does it take to wash two plates and a pan?!? Ok, so he doesn’t cook and he never prepared anything more than a sandwich. And until we moved in together, he lived with 4 sisters, so you can imagine why he doesn’t think a dishwasher is something a women should have in her kitchen… Then I made him wash all the dishes and after the second plate he said: “Ok, tomorrow morning we are going to buy a dishwasher, whatever you want, just don’t make me wash the dishes anymore”! He got it…

Pasta with Gorgonzola and Walnuts

Well, this is why I love quick recipes with few ingredients… There is less cleaning up to do afterward. 🙂 And this recipe is one of those… While the pasta is cooking, you can prepare this exquisite sauce… not much peeling, slicing, dicing…  and the best of all, you will want more…  The crunchy texture of walnuts and the strong taste of gorgonzola combine to make a delicious and creamy sauce for pasta. I chose mafaldine for this sauce, although you can use any type and form of pasta. I sprinkled it with parsley, but to be sincere, that wasn’t such a good idea, I didn’t like it very much, so I won’t even mention it in the recipe. I think next time I will sprinkle it with paprika, I think it would be a good combination, I’ll let you know. 🙂

Pasta with Gorgonzola and Walnuts

This dish is high in calories, but you can reduce some calories by using milk rather than the cooking cream, but the flavor and the consistency won’t be the same. If you decide to try this recipe, let me know how you like it!

Mafaldine with Gorgonzola and Walnuts

  Veggie Pasta

  • Cook: 10 mins
  • Yields: 4 Servings

Ingredients

350 g Mafaldine

20 g Butter

220 g Gorgonzola

15 Walnuts

200 ml Cooking Cream

2 tbsp grated Parmesan cheese

Directions

1Bring a large pan of salted water to a boil, add pasta and cook as indicated on the package.

2Melt the butter in a skillet, add cooking cream and gorgonzola and cook on low heat. Stir until the cheese melts.

3Add chopped walnuts and Parmesan cheese.

4Drain the pasta and add it to the sauce. Toss well to coat.

If you don't like or don't have cooking cream, you can use a 3/4 cup of milk.
