Hi there everyone! I’m back… I finally went home for Christmas to see my parents and spend some time with my family and friends. I usually go home every 6 months or more, so I’m always super excited… Haven’t cooked pasta for 2 weeks now and I have to admit I missed it! š So I decided to start with a super fast and tasty recipe…
I love eatingĀ figs and they are definitely one of my favorite ingredients… Figs are a healthy and versatile ingredient, high in fiber and full of vitamins and minerals. You can use them for making jams, fillings, desserts, sauces and numerous appetizers when you want to add some sweetness without using sugar. And no worries if using dried figs, there is no added sugar in them as in other dried fruits. My Mom often serves fresh figs as an appetizer with goat cheese or as a dessert immersed in hot chocolate (must try!). They are also special when prepared in theĀ oven with red wine, orange juice and cinnamon. The end of summer brings us some of the healthiest and most tasty fruits like figs, grapes, olives and jujube… just writing jujube makes my mouth water, I just looove eating them! My mother has 5 jujube trees and in late October she collects and freezes them for me and my father… It crossed my mind now that I could prepare some jujube pasta recipe… hm… Well, that could be fun…
But let’s go back to today’s recipe… As we always have at least three packages of dried figs at home, I decided to try this combination… Lamb’s lettuce and dried figs… I must admit it was super tasty!! The sweet taste of dried figs, salty parmesan cheese and tangy flavor of lamb’s lettuce combined was a bingo! The only thing I wasn’t really sure about was should I use tortellini or regular pasta… I wanted to make it more complexed and tasty, so I used ricotta filled tortellini, but you can use regular pasta, I think most people would prefer this pesto with normal pasta (any shape is good for pesto)…
Other than being tasty, pesto recipes are very simple to prepare and you can store them in the fridge for 2 -3 days or even freeze them. I love experimenting with pesto recipes and if you tried only the classic basil pesto recipes, I recommend you to try some other pesto recipes, you won’t regret it.
