Hi, there everyone! I hope you all had a great weekend! Today I had so many things to do and I had just half an hour for preparing something to eat for lunch. My friends often tell me they don’t have time to cook and I can totally relate. So that is another reason why I prefer preparing pasta because most of the recipes are quick to prepare, especially pasta salads. I enjoy cooking and it was something that I was interested in since I was a little girl, but I hate the cleaning up part… Well, who doesn’t? So I try to make as less mess as I can… Today I had no time for cleaning up, so I decided to prepare something fast and tasty. As I had some beef leftovers from yesterday’s dinner and whole wheat bread with seeds I prepared yesterday, I just made some super fast and tasty sandwiches for lunch. Two slices of bread, some mayonnaise, arugula, tomatoes, meat and my lunch was ready!
For dinner, I prepared this delicious pasta with baby spinach, shrimps, and baby carrots. I love using baby carrots because they give that sweet flavor that pairs great with shrimps and sweet baby spinach. It is a relatively quick recipe to prepare, you will only need half an hour to prepare it and little cleaning up to do. 🙂
I usually use chopped onions to prepare this recipe, but this time I used garlic instead. But if you don’t like the taste of garlic you can cook chopped onions until golden and then add the rest of ingredients. Also, if you don’t have baby carrot, use regular carrots instead, but as I said before I prefer baby carrots because they are sweater and I love the way they look in the plate, don’t you agree?
For this recipe, I always use short pasta, this time I prepared orecchiette, but you can use any type of short pasta. One of these days I will write a post about which shape of pasta goes with which sauce. One of the things I have learned here in Italy is that choosing the right pasta shape to suit your sauce is very important. Different shapes of pasta go better with certain sauces and pairing the right shape of pasta with your sauce makes a big difference to the finished meal.
