Here we go with another simple pesto recipe. I love experimenting when it comes to pesto recipes, as you have seen with my lamb’s lettuce and dry figs pesto recipe, which by the way is my favorite one. There are so many delicious sauces for pasta, but many of them are a bit difficult to prepare and if you are a newbie in the kitchen pesto recipes are perfect for you. They are so simple to prepare and you can use so many different ingredients and let you imagination loose.
This time, I decided to use avocado in the hope that my little one will eat it, but he ate only parmesan crisps that you can see on the photo. 🙂 I used black sesame seeds, pumpkin seeds and pine nuts and it was not a creamy recipe but a quite crunchy one, which made it a bit different pesto recipe. I have to say that we loved it. My hubby eats all kinds of seeds every day because he is always healthy food eater (not like me and our boy), so he really loved the combination of avocado and all the seeds. I also used fresh basil leaves that give that subtle peppery flavor which makes a perfect match with the flavor of a high-quality extra virgin olive oil.
My son loves “helping” me with my recipes so he wanted some flowers on the plate and we made them together with my mom and some sunflowers with lemon and balsamic vinegar. If you have a child who is a choosy eater, you will probably hear or read somewhere that one of the things that you can try to make you child eat is to prepare him some funny meat or vegetable forms, create “stories” on the plate and so on, but with mine it didn’t work. :/
We also made some parmesan crisps with sesame seeds, which are delicious and pretty easy to prepare and they are perfect for decorating your recipes. You just need to preheat the oven to 180 °C, put a tablespoon of grated parmesan cheese for every crisp you want to prepare on the silicone baking sheet and bake it until golden (about 3 minutes). I also mixed black sesame seeds with grated parmesan cheese before putting it on the baking sheet. Zucchini noodles with lemon are also a great and delicious match for this pesto, but you can combine it with any form of pasta. We eat them raw, but you after slicing you can cook them in salted boiling water for 3 to 5 minutes.
